Canadian Festival Celebrates the Joy of Oyster Shucking

Amidst the glory and celebration of the 2012 Olympics is yet another competition that draws loyal viewers and requires the utmost skill–of oyster shucking. You heard right–in fact, a world championship is held in Scotland every year for those with the best oyster opening skills.

But before that competition, comes Prince Edward Island’s Tyne Valley Oyster Festival. The festival was held last week with all eyes on the Canadian Oyster Shucking Championship. So how exactly is one judged in the shucking? First, contenders must open the shells as quickly as possible. Then judges evaluate each oyster for cut or damaged meat, oysters out of the shell, and grit or shell in the oyster.
